What's after Fantagraphics v.7?

I finally got and read v.1-7 of the Fantagrpahics line. Does it continue onto the Darkhorse volumes now?

Sure does! Although, the Mirage issues are next. Go out and get Dark Horse's UY Book 8! DHC should carry it, along with the other volumes thereafter.

What are the Mirage issues? Fantagraphics also publishes v.8 onward? I'll check them out.

There have been 3 publishers of Usagi Yojimbo: Fantagraphics, Mirage and DarkHorse. Fantagraphics published the first 38 or so comic-books (volume one), which were collected in the graphic novels you already got. Mirage (volume 2) published 16 issues, which are collected in books 8 (Shades of Death), 9 (Daisho) and 10 (Brink of life and death). These 3 books are published by Dark Horse and not Mirage, though. The Mirage issues were colored, but were reprinted in black and white for the books. Finally, DarkHorse has published 68 issues so far, and it doesn't look like they're gonna stop anytime soon

. All the Dark Horse issues can be found in books from 10 (Brink of life and death) to (so far) 16 (Shrouded moon). Book 17 (Duel at Kitanoji) will be released in September.
If you want to check out which books contain which stories, you should check out the
Usagi Yojimbo comics webpage. The latests stories are missing, but a quick update can fix that.
