As far as I'm concerned, NOTHING beats the Cowboy Bebop theme. Not only was this probably the best anime ever made, the intro song by Yoko Kanno and The Seatbelts is incredible.

I dont really have a favorite.....but i do like the soundtrack to Trinity Blood....and also Mayazake music is always nice.....

Trinity Blood does have a great opening theme.
Some of the opening/closing songs from Bleach are good--others may be good but they're not my cup of tea.
I liked some from Rurouni Kenshin, and Twelve Kingdoms had some good music, too.
