Here are a few anime series with opening and closing sequences I like:

Samurai Champloo - I think that the masculine/feminine contrast between the opening and closing sequences is interesting. I've had all of the music from this show on my iPod for a couple of years.

Phoenix - Again, I think the contrast between the opening and closing is interesting. I also think that the opening has a very epic feel to it that sets the tone for the series really well.

Orguss - I don't remember being a big fan of this series when I watched it, but the ending song stuck with me. I was sad to hear that the guy who performed it died recently.

Patlabor - Another cool opening and song. I only learned recently that Patlabor started as a parody of Gundam (sort of like how TMNT started as a parody of Daredevil and Ronin).

Romeo X Juliet, I was very surprised by how good this series is. I highly recommend it to anyone in to anime or not into anime. It fan services Shakespeare.

Monster is currently airing on the Sci-Fi (sorry, I mean SyFy ) Channel on Monday nights. I haven't watched any of it yet, but I have all of the episodes so far recorded on my DVR. I've read a little bit of the manga series, and I like it so far.
